Exper\u0163ii din industria de panifica\u0163ie afirm\u0103 c\u0103 70% din p\u00e2inea neagr\u0103 din Rom\u00e2nia este contraf\u0103cut\u0103. <\/span>Sunt oamenii din pia\u0163\u0103 care cunosc afacerea ca pe buzunarele proprii. P\u00e2inea neagr\u0103 autentic\u0103 are densitatea mai mare, nu e pufoas\u0103, are coaja mai groas\u0103 \u015fi mai tare \u015fi se \u00eenveche\u015fte mai u\u015for.<\/span><\/strong> P\u00e2inea falsificat\u0103, adic\u0103 din f\u0103ina alb\u0103 colorat\u0103 cu mal\u0163, e pufoas\u0103, are coaj\u0103 sub\u0163ire \u015fi rezist\u0103 o s\u0103pt\u0103m\u00e2n\u0103 pe masa din buc\u0103t\u0103rie.<\/span> Dar nu mai are calit\u0103\u0163ile adev\u0103ratei p\u00e2ini negre. Mai mult, colorantul folosit e un produs sintetic, nefiind un produs biologic pur. Afacerea se rezum\u0103 astfel: to\u0163i caut\u0103 o p\u00e2ine mai s\u0103n\u0103toas\u0103 \u015fi se p\u0103c\u0103lesc, m\u00e2nc\u00e2nd una artificial\u0103.

P\u00e2inea neagr\u0103 se face din f\u0103in\u0103 alb\u0103 \u015fi extract de mal\u0163, un fel de miere groas\u0103 care \u00eei d\u0103 culoare \u015fi aspect de “p\u00e2ine ca la bunica”.<\/span><\/p>\n

Brutarul aduce patru saci cu f\u0103in\u0103 alb\u0103,<\/span> \u00eei de\u015fart\u0103 \u00een malaxorul de inox. Adaug\u0103 dintr-un bidon metalic “zeama” colorant\u0103. Cinci kilograme. “E extract de mal\u0163”<\/span> vine explica\u0163ia. \u00cencet, f\u0103ina alb\u0103 devine o coc\u0103 de culoare maro \u00eenchis. “Face culoare, d\u0103 coaj\u0103 crocant\u0103, e 100% natural \u015fi nu ve\u0163i avea probleme cu el”<\/span>, asigur\u0103 Victor, reprezentantul de v\u00e2nz\u0103ri al unei companii din T\u00e2rgovi\u015fte care se laud\u0103 c\u0103 vinde cel mai bun extract de mal\u0163 din Rom\u00e2nia. Este importat din Olanda \u015fi cost\u0103 aproape 2 euro kilogramul.<\/p>\n

Diferen\u0163a esen\u0163ial\u0103 dintre p\u00e2inea neagr\u0103 \u015fi cea vopsit\u0103<\/b><\/p>\n

“\u00cen mod normal, nu are avea voie s\u0103 se numeasc\u0103 p\u00e2ine neagr\u0103 dac\u0103 nu este f\u0103cut\u0103 integral din f\u0103in\u0103 neagr\u0103”, spune Aurel Popescu, pre\u015fedintele Patronatului din Industria de Mor\u0103rit \u015fi Panifica\u0163ie. Rom\u00e2nii cump\u0103r\u0103 de la raft f\u0103r\u0103 s\u0103 citeasc\u0103 eticheta. Dac\u0103 ar face-o, ar \u00een\u0163elege c\u0103 m\u0103n\u00e2nc\u0103 p\u00e2ine alb\u0103 vopsit\u0103. Potrivit lui Viorel Marin, pre\u015fedintele Asocia\u0163iei Na\u0163ionale a Industriilor de Mor\u0103rit, doar o treime din p\u00e2inea neagr\u0103 din pia\u0163\u0103 este cu adev\u0103rat neagr\u0103, realizat\u0103 exclusiv cu f\u0103in\u0103 integral\u0103. Restul este colorat\u0103 cu t\u0103r\u00e2\u0163e de gr\u00e2u sau cu mal\u0163 sub form\u0103 de extract lichefiat.<\/p>\n

Ra\u0163iunea pentru care brutarii p\u0103c\u0103lesc cu p\u00e2inea vine din obiceiurile de consum ale noastre: rom\u00e2nii vor p\u00e2ine neagr\u0103, pentru c\u0103 \u015ftiu de la televizor c\u0103 e s\u0103n\u0103toas\u0103, dar o vor pufoas\u0103 \u015fi rezistent\u0103 mai multe zile, cu coaja sub\u0163ire. A\u015fa ceva nu se poate din f\u0103ina neagr\u0103 adev\u0103rat\u0103, confirm\u0103 orice morar sau inginer tehnolog de panifica\u0163ie.<\/p>\n

\u00cen schimb, p\u00e2inea neagr\u0103 autentic\u0103 are un con\u0163inut ridicat de fibre care stimuleaz\u0103 digestia \u015fi tranzitul intestinal, protej\u00e2nd colonul. F\u0103ina neagr\u0103 con\u0163ine mai mult\u0103 cenu\u015f\u0103, care \u00eei d\u0103 aceast\u0103 culoare, \u00eenchis\u0103, dar \u015fi nutrien\u0163ii \u015fi fibrele suplimentare care fac p\u00e2inea neagr\u0103 preferata nutri\u0163ioni\u015ftilor.<\/p>\n

“Dac\u0103 f\u0103ina alb\u0103 are 55% cenu\u015f\u0103, cea neagr\u0103 ajunge la 72%”, spune morarul Vasile Bunescu. “P\u00e2inea din f\u0103in\u0103 neagr\u0103 nu va avea niciodat\u0103 volumul unei p\u00e2ini normale. Estetic arat\u0103 mai r\u0103u. La noi se cere p\u00e2ine pufoas\u0103. Or aceasta nu o po\u0163i face din f\u0103in\u0103 integral\u0103”, mai spune Aurel Marin.<\/p>\n

\u015ei mal\u0163ul tot la diabet duce<\/b><\/span><\/p>\n

Financiar vorbind, p\u00e2inea neagr\u0103 mincinoas\u0103 este ceva mai ieftin\u0103. Pentru producerea a 350 de p\u00e2ini f\u0103ina neagr\u0103 ar costa circa 180 de lei. 350 de p\u00e2ini albe cost\u0103 doar 130 de lei dar se adaug\u0103 \u015fi pre\u0163ul mal\u0163ului, economia fiind de 20-30 de lei la 100 kg.<\/p>\n

P\u00e2inea neagr\u0103 corect\u0103 ar trebui s\u0103 aib\u0103 pe etichet\u0103 informa\u0163ii stricte: f\u0103in\u0103 de gr\u00e2u neagr\u0103, ap\u0103, sare, drojdie. \u00cen schimb de cele mai multe ori, pe etichetele de p\u00e2ine neagr\u0103 g\u0103sim f\u0103in\u0103 alb\u0103 \u015fi mal\u0163. Gheorghe Mencinicopschi explic\u0103 \u00eens\u0103 c\u0103 \u015fi mal\u0163ul acesta ar trebui de fapt interzis. Consumat \u00een exces fabvorizeaz\u0103 apari\u0163ia diabetului, spune specialistul.<\/p>\n

“P\u00e2n\u0103 acum c\u00e2\u0163iva ani p\u00e2inea neagr\u0103 se colora cu caramel, care a fost interzis. Ceea ce nu se \u015ftie este c\u0103 acel caramel a fost \u00eenlocuit cu mal\u0163, care \u00een momentul proces\u0103rii p\u00e2inii genereaz\u0103 tot caramel”, a declarat Mencinicopschi. Potrivit speciali\u015ftilor de la Siguran\u0163a Alimentelor, nimeni nu a investigat dac\u0103 mal\u0163ul este la fel de nociv, dup\u0103 ce caramelul a fost interzis \u00een 2002. “Vom cuprinde \u00een strategia noastr\u0103 de control \u015fi o verificare a con\u0163inutului de caramel din p\u00e2inile cu mal\u0163”, a spus Floare Chiru, adjunctul \u015fefului de la Siguran\u0163a Alimentelor Timi\u015f.<\/p>\n

Hipermarketurile sunt pline de p\u00e2ine neagr\u0103 vopsit\u0103 cu mal\u0163. Am luat de pe raft o p\u00e2ine din Arad, ambalat\u0103 \u00een pung\u0103 potocalie, care are notat pe ambalaj o compozi\u0163ie format\u0103 din f\u0103in\u0103 alb\u0103 \u015fi f\u0103in\u0103 neagr\u0103, iar \u00een parantez\u0103, dup\u0103 aceasta din urm\u0103, este explicat\u0103 ca fiind “de mal\u0163”. Mai \u00eencerc\u0103m o p\u00e2ine, de Timi\u015foara, una cu punga colorat\u0103 galben: f\u0103ina de mal\u0163 este denumit\u0103 “neagr\u0103”, iar p\u00e2inea mai con\u0163ine f\u0103in\u0103 de gr\u00eeu \u015fi ameliorator.<\/p>\n
